Pre- Harvest preparation

As we count down the days until harvest, we are busy at work in the Vineyard making sure the fruit is of the highest quality. We have been hard at work removing most of the leaves around the fuit to maximise sun exposure which will help to ripen the grapes. We also select only the best grapes from each vine by green harvesting, meaning we cut away any small green bunches to increase the intensity and sweetness of those we choose to leave on the vine. By doing this, we ensure high sugar, low acidity fruit which is optimal for still wine, and will require less manipulation in the winery.
